Cherry Compote
Ingredients:
1 cup red wine such as zinfandel or syrah
1 cup apple cider
2 tablespoons honey
1 cinnamon stick
2 cloves star anise
2 whole cloves
1 whole vanilla bean split and scraped, or 2 teaspoons vanilla extract
8 ounces pitted fresh Lambert or other variety fresh, non-pie cherries
Directions:
In a medium saucepan, combine the red wine, apple cider, honey, cinnamon stick, cloves, star anise, vanilla bean and scrapings. (If using vanilla extract, wait to add until the syrup is removed from the heat.) Bring to a boil, reduce heat and add the cherries.
Simmer for 20 minutes, or until syrup consistency is achieved. Remove from heat. Set aside and let cool. This mixture can be made up to 2 days ahead.
