Classic Meatloaf


Sometimes there is nothing better than good old comfort food.  And to me, meatloaf ranks right up there with the best of them.  This classic meatloaf recipe is just like my mom makes.  Served with creamed potatoes and green beans.   Now that’s comfort! 

Classic Meatloaf
  • 2 lbs ground Italian mix (beef, pork and veal)
  • ½ cup bread crumbs (fresh)
  • ¼ cup diced onion
  • ¼ cup diced green bell pepper
  • 1 egg (lightly beaten)
  • salt and pepper
  • 2 tbsp. tomato paste
  • 16 oz tomato sauce
  1. Preheat oven to 350 degrees F.
  2. Mix together the beef, bread crumbs, onion, egg, salt, pepper, and tomato paste. Form this mixture into a loaf and place it in a shallow pan. Pour tomatoe sauce over the meatloaf. Bake for 1½ hours, basting every 15 minutes with the pan juices.

    Meatloaf is my one of my favorite comfort foods! I love green pepper in mine too!
