Green Beans with Pancetta

Christmas 2009 045Ingredients:
1 lb freshgreen beans, cleaned
3 oz thinly sliced pancetta
2 tbsp olive oil
4-6 cloves garlic, minced
kosher salt
freshly ground black pepper

Directions:
Add olive oil to large pan (big enough to accommodate green beans) and heat to medium high. Add pancetta and cook until brown and crispy. Remove from pancetta from pan and place on paper towel.

Sautee garlic in pan for 2-3 minutes. Add green beans and cook on medium low heat until tender. Approximately 15-20 minutes. Season with salt and pepper. Just before serving add pancetta.
