Zucchini and Tomato with Fresh Mozzarella

I really had my heart set on Fried Green Tomatoes yesterday, but as luck would have it I couldn’t find a green tomato any where. My tomatoes in my garden were either already red or too small to be picked. My local farmer’s market didn’t have them either but he assured me they would have some ready to be picked by Friday. So I guess I will just have to wait until next weekend to get me Fried Green Tomato fix!
But then my good friend called and said she was coming up with a bottle of wine. Would I have a gless? Well of course I would, I’d be crazy to turn that down. So rummaged through my refrigerator and came up with some fresh mozzarella and then I found some zucchini. Went out into my garden and picked a few tomatoes. And there it is – Zucchini and Tomato with Fresh Mozzarella! And it was delicious!
- 1 Zucchini
- 4 Roma tomatoes
- 4 oz. Mozzarella
- Basil leaves
- Balsamic vinegar
- Olive oil
- Salt and freshly ground pepper
- Heat oven to 425 degrees. Slice zucchini and tomatoes. Place on baking sheet in an even layer. Drizzle with olive oil. Sprinkle with salt and pepper. Roast for about 10 minutes or until zucchini and tomato slices are tender.
- On a plate, stack zucchini, tomato, and mozzarella. Top with a basil leaf. Drizzle with balsamic vinegar. Sprinkle with salt. Serve.

This dish would probably go great with some sweet red wine. I know it goes well without the zuchini at least! So many possibilities with fresh mozz.
