We love Nutella in this house. I buy it in bulk at Costco just about everytime I go (which is weekly). We dip our pretzels in it, I make gelato with it. My one daughter puts it on her toast for breakfast. My other daughter eats it by the spoonful…. So I thought how yummy would a No-bake Nutella Cheesecake be? Well, it’s just about perfect!
24 Graham Crackers, either honey or chocolate
3 tablespoons unsalted butter, melted
1 (8 ounce) package cream cheese, room temperature
1 cup Nutella
1 tsp. pure vanilla extract
1 tsp. instant coffee
1 8 ounce tub whipped topping
In a bowl, mix together the graham cracker crumbs and the melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.
In your stand mixer (or a large bowl and hand mixer) beat the cream cheese and Nutella until smooth. Add vanilla and instant coffee and mix until combined. Gently fold in the whipped topping until well blended and no streaks remain. Careful not to over mix and deflat your mixture.
Evenly spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
Garnish with additional whipped topping, chopped hazelnuts and/or chocolate shavings.
