I don’t like mushy guacamole, it’s a texture thing for me. So my guacamole is chunky. The key is to find the perfect avocado. If they are too ripe then it gets mushy no matter what. I like to use ones that is just slightly hard, this will keep the right consistency when you start mixing it together. I like to eat this with tortilla chips or as an accompaniment with my fish tacos.
Shrimp Tacos with Chunky Guacamole
- 1 lb. cooked and peeled shrimp, thawed
- 2 ripe avocados, peeled, pitted and diced
- ½ small red onion, diced
- 1 medium tomato, diced
- 1 jalapeno, seeded and diced
- 2 tbsp cilantro, chopped
- Juice from 1 lime
- 8 flour tortillas
- Dice all your ingredients, excluding the shrimp, in small into small pieces and put into a small bowl. Squeeze the juice of one 1 lime over it and combine with the cilantro. Salt to taste. Add shrimp and gently mixed to together. Pile a healthy amount on your warm tortilla and that’s it!
