This recipe for Red Beans and Rice was my most popular recipe for the year 2012.  And rightfully so.  This one pot meal is packed with protein and flavor.  Perfect for after the holidays when you are trying to loose a few of those extra pounds.  This one dish wonder also is a great dish to serve on the snowy football Sundays.

Red Beans and Rice

Ingredients

  • 1 cup water
  • 2 14 oz. cans red kidney beans
  • 1 14 oz. can diced tomatoes
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • ¾ cup chopped celery
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ¾ teaspoon ground red pepper
  • ½ teaspoon black pepper
  • ½ (14-ounce) package turkey, pork, and beef smoked sausage, thinly sliced (such as Healthy Choice)
  • 1 bay leaf
  • 5 garlic cloves, minced
  • ½ teaspoon salt
  • 3 cups hot cooked long-grain rice
  • ¼ cup chopped green onions

Instructions

  1. In a large pan brown smoked sausage.
  2. Add onion, green pepper and celery. Saute about 3-5 minutes.
  3. Add remaining ingredients.
  4. Cook on high heat for 45 minutes or until liquid has reduced and thickened.
  5. Discard bay leaf; stir in salt. Serve over rice; sprinkle servings evenly with green onions
