I never would have thought about creating a marinade for my fajitas using red curry paste, but wow, what a great flavor combination. As my husband said “flavors are just popping all over the place”. And the good news is that the kids enjoyed it too. But who doesn’t like grilled steak fajitas. This recipe for Red Curry Marinated Skirt Steak Fajitas will be one that I will use over and over again.

 

Red Curry Marinated Skirt Steak Fajitas
Recipe type: Main, Entree
 

Ingredients
  • 2 tbsp. red curry paste
  • ¼ cup olive oil
  • 5 tbsp. lime juice (about 3 limes)
  • 2 lbs. skirt steak
  • ¼ cup honey
  • salt and pepper to taste
  • fresh cilantro leaves

Instructions
  1. In a small bowl, mix together curry paste, olive oil, and 2 tbsp. lime juice until smooth. In a large baking dish, rub mixture all over steak to coat. Salt and pepper each side. Cover with plastic wrap and refrigerate for at least 4 hours and up to 12 hours.
  2. In a small bowl whisk honey and the remaining 3 tbsp. lime juice. Set aside.
  3. Prepare your grill for direct grilling on high heat. Grill steak approximately 10 minutes, turning over once, for medium-rare or until slightly charred on both sides. Transfer to a cutting board. Let rest for 10 minutes. Thinly slice steak against the grain.
  4. Transfer to a serving platter. Drizzle with honey and lime mixture. Sprinkle with cilantro. Serve with grilled onions, roasted red peppers and flour tortillas.
